Salt first, then the sweetness underneath it. The board's exclamation mark — one is plenty, and a second blue is nearly always a mistake.

Cut
Never slice it. Break it into rubble with the back of a spoon — a knife smears the veining and the board looks bruised.
Place it
Its own corner, with honeycomb touching it. On its own it goes home untouched; beside something sweet it disappears.
Goes with
Honeycomb, walnut, pear, Sauternes, Medjool date, dark rye.
Avoid beside
Other blues, and anything delicate — it flattens fresh chèvre and burrata completely.
Buy instead
Stilton if you want it milder; Valdeón if you want it louder; Gorgonzola Dolce if the room is nervous.
